Ginger Beef Stir-Fry

Last week I made this stir-fry recipe  for the very first time. I’ve made other stir frys in the past, but when my friend Wendy told me that it was the best recipe EVER–I had to try it.

Once I made it two things happened 1) Michael said it was the best meal I’ve ever made! 2) My kids insisted that we have it weekly, so we’ve decided to start having stir-Fridays. Woo to the hoo!

It really is that good! For the most part I stuck to Wendy’s instructions, but I used fast fry steaks instead, I didn’t have steak spice, and I probably cook my veggies a little longer than most people, just because I love them a bit soft.

Here’s the recipe she gave me… hope you like it!

Wendy’s Ginger Beef Stir Fry

4 small Angus steaks thinly cut into strips and seasoned in steak spice, garlic, ginger, pepper

Mix a couple tablespoons of cornstarch with a couple tablespoons of water and toss with the meat

Chop up A lot of:

Broccoli
Cauliflower
Carrots
Mushrooms
Onion
(I threw in some other veggies I had: red pepper, celery)

Into some oil cook the meat and onion til desired done-ness.

Remove meat from pan/wok

Add veggies into pan with a cup of water. Stir fry about 5 min til veggies are desired done ness… Still a bit crisp is best. Add the meat back in.

Mix about 2/3 cup of soy sauce with a couple tbsp of brown sugar, some ginger, garlic, salt and pepper and a couple or 3? tbsp of corn starch. Mix well and add to pan. Cook a couple minutes til sauce is thickened.

Serve with rice.
